Bio
Ashwini Wagle, Ed.D, MS, RD, FAND, is a Professor and Chair of the Department of Nutrition, Food Science, and Packaging at San Jose State University (SJSU). She is deeply engaged with several organizations, including the South Asian Heart Center (SAHC) at El Camino Hospital, the Center for Healthy Aging in Multicultural Populations (CHAMP), the Nourish Project at Stanford University, and the Bay Area chapter of Rise with Hunger. Her research focuses on the intersection of food, culture, and health, with particular attention to traditional health beliefs, food behaviors, and their nutritional implications for multicultural populations, especially South Asians. She also examines issues related to food insecurity and hunger. Dr. Wagle has contributed numerous articles to peer-reviewed scientific journals and presented over sixty abstracts at national, state, and local conferences. She is the author of the widely used book Carbohydrate Counting: Traditional South Asian Food Lists: For Management and Prevention of Diabetes Mellitus, which serves as a key nutrition education tool in hospitals across the United States, the UK, Canada, Australia, and Hong Kong.
Outside of her professional life, Dr. Wagle enjoys writing poetry, cooking, hiking, and running. She has participated in over 100 races, including half-marathons, triathlons, and relays, and has plans to continue hiking around the world.
